Many people call on a caterer at most, three times in their life. These events being of great importance: A Wedding, 21st Birthday or Club Anniversary.
Whatever the reason, it is crucial you can use a caterer with confidence. The caterer should remain in compliance with food hygiene laws and have staff trained in food handling.
If you are hiring a caterer there are a few questions that you should be addressing:
- Has the caterer and staff been trained in safe food handling?
- Is the food being safely prepared in a commercial kitchen and transported to the venue in a way that minimises the risk of food poisoning?
- Does the caterer have public and product liability insurance so that if there is a problem, I am covered? Is staff covered for workers' compensation. If an employee has an accident in my home, are they covered by insurance?
What is involved to becoming a Gold Licence Caterer?
It is important to realise a large number of caterers currently operate without complying with important legislative standards. The Caterers Gold Licence Accreditation Scheme lays down the minimum standards and informs the public to what standards are fundamental to a catering business.
A Gold Licence Caterer must have the following:
1. Commercial Kitchen - It is a legal requirement for all commercial caterers to have a commercial kitchen for the preparation of food, adequate refrigeration for food and appropriate facilities for the transportation of food and the handling of food on site.
2. Up-to-Date and Relevant Insurances - It is imperative that a caterer provides for the adequate protection of consumers by taking out public and product liability and workers' compensation insurance.
3. Training and/or Experience - Gold Licence caterers must have on board a senior person with at least five years experience within the hospitality industry. This experience should be in food preparation or catering management, or an employee who has a trade qualification in cooking.
4. FoodSafe (WA only) - The FoodSafe Food Handler Training Program insists the following criteria have been met.
- All food handlers have been trained
- FoodSafe practices are in place including; cleaning and sanitising, temperature monitoring, pest control and deliveries monitoring
- Hygiene standards have been checked by an Environmental Health Officer
- FoodSafe is the first step to safer food. It encourages food handlers to:
- Store food at safe temperatures
- Separate cooked from raw food
- Wash hands correctly
- Wear clean, protective clothing including correct footwear and hair covering
- Thaw foods in a refrigerator or microwave
- Clean and sanitise equipment and utensils
- Ensure premises are cleaned daily
- Food packages are within their use by date
- Control of pests
An Independent Accreditation Board has been established in each state to undertake the approval of Gold Licence Caterers. The Board consists of representative for governing industry bodies and State Accreditation Sub-Committee. Restaurant & Catering Australia has a commitment to industry standards through the establishment of the Caterers Gold Licence Accreditation Scheme.
